Easy White Bean Chicken Chili with Canned Soup Starter
What makes this White Bean Chicken Chili quick and easy is the fact that you’ve already prepped most of the ingredients. If you have 5 minutes, you have time to get this soup going. Below are the items I used, with the exception of chicken. That was still conveniently in the freezer and didn’t make it into the picture.

What is in the soup starter?
- white beans
- onions
- chicken stock
- that’s it.
If there’s something to stock your canned good pantry with besides stock, it’s a soup starter. There is so much flavor that develops and it immediately provides bulk and texture to the soup, or in this case, white bean chicken chili.


The chicken above got diced and placed into a couple of bags destined for the freezer. Having already cooked chicken on-hand makes a world of difference when throwing a quick meal together. So between the chicken being cooked and ready-to-go and the soup starter having a bulk of the ingredients, this chili comes together in no time.
Assembling the Chili
Ingredients
- Soup Starter
- Chicken Broth or Water
- Chicken
- Poblano that has been roasted and skin removed (optional ingredient but highly recommended)
- Chopped Green Chilis
- Cumin
- Chili Powder
- Garlic Powder
- Oregano
- Salt and pepper to taste
How to Cook the Chili
Simply dump the quarts of soup starter into your pot of choice – large pot, dutch oven or crockpot. Add your chicken, chilis and spices. Fill the pot with more chicken and/or water to your desired consistency. Cook until hot and it’s ready when you are!
Top with your favorite toppings and enjoy.
White Bean Chicken Chili with Canned Soup Starter
Quick, easy and delicious. The depth of flavor you get in this soup makes it feel like it has been simmering all day. Make it once and I promise you'll make it on repeat.
Ingredients
- Chicken
- 2 quarts Soup Starter , Soup Starter = home-canned white beans and onions in broth or water
- 2 cups Chicken Broth
- 1/2 Poblano Pepper (Optional) , roasted, skin and seeds removed
- 1/2 can Green Chiles , 2 oz out of the 4 oz can
- 1 tsp Oregano
- 2 tsp Cumin
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- Salt and Pepper - to taste
- Salt and Pepper - to taste
Instructions
- In a large pot combine the soup starter, chicken, broth, and spices.
- Finely chop the roasted poblano and add to the pot.
- Open the can of green chiles and put half (2 oz) to the pot.
- Boil for at least 10 minutes.
- Adjust salt and pepper to taste.
- Top with your favorite fixings and enjoy!
