Sausage, Vegetables, and Canned Potatoes
Easy Sheet Pan Recipe
With under ten minutes of meal prep, this sheet pan dinner with canned potatoes is a winner. While I chose peppers and onions for this recipe, really any vegetables will work. Just know that some vegetables cook at different rates so if you’re choosing something like, zucchini, for instance, you’ll want to add it to the pan about 15 minutes before everything else is done. Things like peppers, onions, cabbage, root veggies, etc. can all stand the longer cook time. Basically, choose what you and your family like to eat and you’ll have this dinner in your back pocket for the nights you just don’t want to put thought into a meal. Sausage, vegetables, and canned potatoes.

Equipment
I love having canned potatoes on hand because you add a hearty component to the dish without having to take the time to wash and peel potatoes. The great part about a sheet pan meal with canned potatoes is that you can swap out everything else to make it work for your family. Don’t like sausage? Use chicken. Not a pepper family? Do carrots, broccoli, and cauliflower. Protein, veggie, starch = dinner is done.
